Callebaut’s chocolate makers found out that unique components, naturally present in Ruby cocoa beans, yield chocolate with an exceptional red-pink colour and fruity taste. Years of research and experimenting have gone into discovering the best way to process the beans during chocolate making.
They’re grown in the traditional cocoa growing countries of Brazil, Ecuador and the Ivory Coast. Neither genus or origin determine the qualification for a cocoa bean to be a Ruby bean, the natural occurrence of sought-after precursors determines whether a cocoa bean will yield the typical Ruby chocolate colour and taste during processing.
