Chocolate truffles are a staple of every artisan chocolate shop; beautifully handmade balls of indulgent ganachecoated in a dusting of cocoa powder. They’re a classic that always goes down well with customers. But what if you wanted to create something a little different? That’s where freeze dried and spray dried fruit powders come in.

How to Make Flavoured Chocolate Truffles

These quick and deliciously moreish truffles couldn’t be simpler to make, and you can customise them in a number of ways.

First, choose your base recipe:

Using the Kessko Gourmet Truffle Mass in either white or dark chocolate, you can either make handmade truffles, or warm and pipe the filling into ready-made truffle shells for a satisfying snap around your melt-in-the-mouth truffle filling.

Gourmet Truffle Mass can be used as is, or flavoured with a variety of products, including flavour pastes and alcohol concentrates (which also increases the shelf life or your truffles!). You can also add some melted butter or condensed milk for an even creamier taste.

Once your truffles have set, the fun really begins!

Coating Chocolate Truffles with Fruit Powders

You probably already know that we stock a wide range of cocoa powders, but you may not have tried our variety of fruity powders for chocolate-making. With everything from vibrant green Matcha tea powder and deep red Beetroot powder (perfect for colouring dark chocolate or keeping ruby chocolate looking rosy!), to exotic Spray dried Mango powder, Spray dried Passion fruit powder, there’s a tantalisingly colourful powder to suit every truffle flavour.

Match your filling to your coating with a fruit flavoured paste and coat with Freeze dried Raspberry powder or Spray dried, or Freeze dried Strawberry powder or Spray dried. Or add a pop of bright, berry flavour to a white chocolate truffle with Spray dried Blackcurrant powder or Spray dried Elderberry powder.

And for a more classic look and taste, there’s always chopped nuts, desiccated coconut or chocolate splitters!

Our freeze dried and spray dried fruit powders come in a rainbow of colours and a variety of flavours, giving your classic chocolate truffles a fun, modern twist that will catch your customers eye and tempt their taste buds. Give them a try instead of your usual cocoa powder!

And if you’re in the mood for dried fruits, give our recent blog about mincemeat a read for lots of new and exciting ways to use this traditional filling.
